Tomato and cottage cheese bagel
This fresh recipe is perfect for a light summer lunch. Created by Hannah Wilding of Bold Bean Co, it captures her signature style of simple, flavour-packed cooking that results in a delicious, satisfying meal every time.
Ingredients (1 serving):
- 1 everything seasoning bagel (or 1 thick slice of toasted bread)
- 3–4 tbsp cottage cheese
- A handful of big tomatoes, halved (we love the Isle of Wight coeur de boeuf tomatoes)
- Fresh chives, finely chopped
- Black pepper, to taste
- Optional: olive oil drizzle or pinch of chilli flakes
Method:
- Toast your bagel or bread until golden and crisp.
- Spread a generous layer of cottage cheese while the toast is still slightly warm.
- Top with halved juicy tomatoes.
- Sprinkle over chopped chives.
- Finish with a good crack of black pepper (and chilli flakes if you like heat).
- Optional: drizzle a little olive oil for extra richness.
Serve immediately while the toast is crisp and the cottage cheese is cool and creamy against the warm base.
