Tomato and cottage cheese bagel

This fresh recipe is perfect for a light summer lunch. Created by Hannah Wilding of Bold Bean Co, it captures her signature style of simple, flavour-packed cooking that results in a delicious, satisfying meal every time.

Ingredients (1 serving):

Method:

  1. Toast your bagel or bread until golden and crisp.
  2. Spread a generous layer of cottage cheese while the toast is still slightly warm.
  3. Top with halved juicy tomatoes.
  4. Sprinkle over chopped chives.
  5. Finish with a good crack of black pepper (and chilli flakes if you like heat).
  6. Optional: drizzle a little olive oil for extra richness.

Serve immediately while the toast is crisp and the cottage cheese is cool and creamy against the warm base.
