Cottage Cheese, Peas & Crispy Onion Sourdough Toast
Creamy, crunchy and fresh, this quick sourdough toast is an easy high-protein breakfast, lunch or light snack.

Ingredients
- 2 slices sourdough bread, toasted
- 4 tbsp cottage cheese
- 2 tbsp peas (fresh or frozen, cooked and drained)
- 2 tbsp crispy onions
- 2 tsp chilli flakes
- 2 tsp fresh basil, finely sliced
- Olive oil, for drizzling
- Salt and freshly ground black pepper
Method
- Toast the sourdough slices until golden and crisp.
- Spread 2 tablespoons of cottage cheese over each slice of toast.
- Scatter 1 tablespoon of peas over each slice.
- Top with crispy onions, then sprinkle over the chilli flakes and fresh basil.
- Finish with a light drizzle of olive oil.
- Season with salt and freshly ground black pepper to taste.
Serve immediately while the toast is warm and crisp.
