Cottage Cheese, Peas & Crispy Onion Sourdough Toast

Creamy, crunchy and fresh, this quick sourdough toast is an easy high-protein breakfast, lunch or light snack.

Method

  1. Toast the sourdough slices until golden and crisp.
  2. Spread 2 tablespoons of cottage cheese over each slice of toast.
  3. Scatter 1 tablespoon of peas over each slice.
  4. Top with crispy onions, then sprinkle over the chilli flakes and fresh basil.
  5. Finish with a light drizzle of olive oil.
  6. Season with salt and freshly ground black pepper to taste.

Serve immediately while the toast is warm and crisp.
