Green Goddess Bagel 🥯

Meet the Green Goddess Bagel – a vibrant creation inspired by our delicious collaboration with Homewrecker Pimento Cheese. Rich, punchy and packed with fresh greens, this bagel layers creamy pimento heat with silky avocado, soft scrambled egg, fragrant basil and a tangy kick of pickled red onion. It’s the ultimate morning (or midday) pick-me-up for those who like their breakfasts bold, balanced and full of colour.
Ingredients:
- 1 fresh bagel, sliced and toasted (your choice of flavour — plain, everything, or seeded works well)
- 2–3 tbsp pimento cheese (preferably by Homewrecker or a spicy, creamy variety)
- 1 large egg, scrambled
- A handful of fresh spinach
- 1/2 ripe avocado, sliced
- A few fresh basil leaves
- A small spoonful of pickled red onions (for that beautiful pink pop)
- 1–2 tbsp basil pesto
Method:
- Toast the Bagel
Slice your bagel in half and lightly toast it until golden and crisp on the edges. - Spread the Pimento Cheese
On the bottom half of the bagel, generously spread the pimento cheese. Let it get a little melty from the warmth of the bagel. - Add the Scrambled Egg
Cook your scrambled egg to a soft, fluffy texture and layer it right on top of the pimento cheese. - Layer the Greens & Avocado
Add a layer of fresh spinach over the egg, followed by avocado slices. Fan them out for even coverage and creamy bites in every mouthful. - Fresh Basil Touch
Tear a few fresh basil leaves and sprinkle them on top of the avocado for that herbaceous lift. - Pickled Red Onions
Add a pop of tang and colour with a few ribbons of pickled red onions. - Pesto Time
Spread a layer of basil pesto on the top half of the bagel. - Assemble & Serve
Press the pesto-covered top half of the bagel over the stack, slice in half if desired, and enjoy your Green Goddess Bagel masterpiece!
